Black garlic is not burnt and not fermented — it is garlic held at a low, wet heat for forty days until its sugars and amino acids brown it from within. What comes out is soft as a date, sweet like molasses, with balsamic depth.

We age one small chamber per harvest. When a batch sells out, the next one is already thirty days away.
